Vegetarian sushi

Ingredients

  • 1 deep fried tofu cutlet
  • 1 cucumber
  • 6 sheets of seaweed
  • 1 large carrot
  • 1 preparation of sushi rice
    Ingredients for the spicy mayo :
  • 1/4 cup of Japanese Kewpie mayonnaise
  • 1 tbsp of sriracha sauce
  • A splash of lime juice
    Useful utensils :
  • Sushi mat
  • Rice paddle
  • Knife
  • Cutting board

How to do :

1/ Start by cutting your cucumber lengthwise, making long and thin
slices (they should be slightly smaller than your sushi mat).

2/ Cut your carrots into pieces equivalent to the cucumber. If your
carrot is too small to do so, no worries, you can just cut them into
smaller pieces and place multiple in a row when we will be making
our sushi.

3/ Cut your tofu cutlet into long slices, about the size of your mat.
They need to be about 3 centimeters wide and 1 centimeter long.
Once that’s done, cover each face of your tofu strips with corn
flour, and in a pan, heat some vegetable oil. Once that’s hot, you
can start frying your tofu strips until they are golden brown.

4/ Place your seaweed on your sushi mat, then cover it with your
preparation of sushi rice, using your rice paddle to evenly spread it
out. Make sure that your rice is spread into a very thin layer.

5/ Lay two or three slices of cucumber and carrot, followed by
your pieces of fried tofu, making sure that they all cover the entire
width of your preparation. Then roll it up using the sushi mat. And
there you go! You have your sushi roll! All you have to do is to cut
it in slices to make your sushi !

6/ For your spicy mayonnaise, just mix 1/4 cup of Japanese
Kewpie mayonnaise, 1 tablespoon of sriracha sauce and a splash of
lime juice!
